IT ALL STARTED IN OUR FRONT ROOM.

When our daughter Adele was growing up, she loved building little cardboard shops in our front room, selling all sorts of tidbits from ‘Chez Madame Ada.’ So — when we opened our petit coffee van in London in July 2020, there was no question.

A real-life ‘Mada Mada’ was born.

FROM COFFEE VAN TO FAMILY BUSINESS


What started as a small business selling coffee and fresh-baked chouquettes quickly evolved into a family operation when, in November of that same year, we started making and selling pralinés. Our regulars loved them and, suddenly, the whole family was involved. 

Ada had already designed the logo. My wife joined me, Theodore, in making the pralinés. Our little boy Victor is now our fearsome taste-tester while our newborn Vincent keeps us all on our toes when we’re not hard at work!

Time to taste.

We must say, we’re not surprised at the response to pralinés. After all, we’ve been enjoying this French treat our whole lives.

Plus — pralinés are not just delicious. Thanks to the high nut content, they deliver a great source of fibre, plenty of vitamins and minerals, even some bioactive constituents. That’s why local stockists are now bringing our jars into kitchens across London.

And we’re convinced you’ll love them too once you’ve had your first taste.

We now supply some of the best caterers, chefs, bakers and patissiers around, and we’re very proud. Being from a patisserie background ourselves, it’s really important to get this validation from the industry.

Our VALUES

The three things that drive us everyday.

  • It’s all about quality!

    No added oils, no preservatives, no flavourings, only the tastiest natural ingredients and always lots of nuts!

    We couldn’t understand why, in all the spreads available, the first ingredients were always oil and sugar. For this reason, we wouldn’t let ourselves eat them, let alone feed them to our children!

    So we decided to make our own.

  • We always say: We did not invent praliné but we make it as good as can be by choosing the tastiest nuts, keeping the caramel to a minimum and very importantly, stone grinding our ingredients. Using this traditional slow process allows to get all the natural oils and flavour from the ingredients. That’s not something you can do by rushing it in a cutting machine!

  • We call it innovation but really, we just love playing around with pralinés!

    We experiment with flavours, textures, sweet and savoury but like all true experiments, sometimes it works, sometimes it doesn’t!

    When we are happy with our trials we make them available to buy on our website and on Delli.Market.

    We’ve only scratched the surface of what we can do with praliné, so watch this space!
